The Kiwi Lolly Cake


The lolly cake - for a kiwi kid it was a year round treat.


On my recent holiday to NZ I saw Lolly Cake everywhere...I sampled a few too....I will never be too old to enjoy it.
You see it at every bakery, supermarket, convenience store and bake sale, and because it was so easy to make, and the ingredients were staples in the pantry, a lot of mums made it at home.

I popped a packet of the lollies and malt biscuits into my suitcase, so that I could make a batch as a gift for a friends children once I got back to the States. 

You don't have to look far for the recipe, It's even on the packets of the "lollies" .

100g butter, melted
250g malt biscuits, crushed
1/2 tin sweetened condensed milk
160g fruit puffs, roughly chopped
and coconut

                             Mix together butter, biscuits, condensed milk and fruit puffs. 
                
                                             Shape into a log and roll in coconut. 
                                         Refrigerate until firm and then cut into slices

My mission now is to find the malt biscuits substitute here....the fruit puffs aren't a problem - they have  "orange circus peanuts" candy that are suitable.
